Why it works
Theory allows Black one capture on c3 — the bishop's — and the position after 8...Bxc3 9.bxc3 is a known battlefield. 9...Nxc3?? takes the same square twice, and the second helping is poisoned: the e-file behind the knight is now empty all the way to the king, and 10.Qe1+! sets the skewer. 10...Qe7 blocks, 11.Qxc3 collects the knight at leisure. Grabbing two centre pawns' worth of material sounds like refuting the Italian centre; grabbing it with the king on e8 refutes only yourself.
Refutation
9...d5! is the theory move and the engine's favourite (+0.5 for Black): return the piece-hunting ambitions, blunt the c4-bishop, finish developing. The Italian's c3–d4 centre always offers this bargain — one capture is business, the second is a loan against your king's address.
